Design Centre courtyard.

10.30 ~ 11am: Entertain with confidence after watching
Fiona Hoskin, of Fee & Me restaurant fame, whip up an
entrée of Tasmanian crayfish on parsnip puree with mint
oil and lime dressed salad.
11.30 ~ 12noon: Highly regarded chef and food
consultant, Xavier Mouche combines his knowledge of
Swiss-French cooking with delicious local ingredients
to present his original version of Heidi Gruyere cheese
fritter with asparagus salad.
12.30pm ~ 1pm: Andre Kropp, executive chef at Hobart's
Henry Jones Art Hotel, lets his South African heritage
and love of Mediterranean flavours be the inspiration for
"Variations on Goat".
1.30 ~ 2pm: Peppermint Bay chef Paul
Foreman shares his knowledge of slow cooking, curing
and preserving as he presents his dish of local wasabi
"scramble'', confit abalone, cured ocean trout and
preserved lemon beurre blanc.
2.30 ~ 3.15pm: Watch the master of desserts Paul
Herbig, of Launceston's Tant Pour Tant, create a
decadent mousse cake favouring all things raspberry.
